My Favorite Zucchini Nut Bread Recipe - Without Nuts

After experimenting with many different zucchini nut bread recipes, I believe that I have found the best alteration for anyone who is either allergic to nuts or just plain does not like them. It is not too far off from the original recipe, but there is definitely one major difference. Yes, you guessed it, this zucchini nut bread recipe does not contain nuts!
What I have found to be the perfect substitution is chocolate chips.
Here are the ingredients:
1 cup of grated zucchini
1 1/2 cups of flour
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
1/4 tsp nutmeg
1 egg beaten
1 cup of sugar
1/4 cup of cooking oil
1/2 cup of chocolate chips (normally nuts)
First, cut the zucchini into pieces and remove the large seeds to keep them from appearing in your bread.
Mix the egg, sugar, zucchini and oil all together. Take all of the remaining dry ingredients and add to the mixture. Stir until moist and then fold in chocolate chips. Set the oven to 350 degrees and bake for 55 minutes or until you can remove a toothpick and it comes out clean. Finally, cool and remove from pan.
I store the bread in freezer bag or any other air tight container I have lying around. Makes 1 loaf.
I hope that you enjoy this zucchini nut bread recipe -- without the nuts -- as much as I do.
