The Best Apple And Carrot Muffin Recipe

Healthy food and recipes are all the rage at the moment. Unfortunately a lot of them take out the stuff that makes them taste good like fat and sugar. Adding fruit into muffins is a great way to keep the sweet flavour while keeping out sugar. Below is my very favourite recipe for apple and carrot muffins, they can be made with or without sugar.
Here are the ingredients you need:
  • 1 3/4 cups raisin bran cereal (or similar cereal with raisins/sultanas and flakes)
  • 1 1/4 wholemeal flour
  • 1 1/4 tspn baking powder
  • 1 tspn ground cinnamon
  • 1/4 tspn salt
  • 1 egg
  • 3/4 cup buttermilk
  • 1/4 cup canola oil
  • 3/4 cup grated (or finely chopped) apple
  • 3/4 cup grated carrot
  • 1/4 cup walnuts
  • (1/2 cup of sugar if you like them sweet)
If you have nut allergies, simply leave out the nuts and be sure to use a cereal that does not contain traces of nuts.
Preparing for baking:
  1. Preheat the oven to 180 degrees C (400 degrees F).
  2. Mix together all of the dry ingredients (cereal, flour, baking powder, cinnamon and salt [sugar too if you added it]) in a large bowl.
  3. In a different bowl whisk together the egg, canola oil and buttermilk.
  4. Create a small hole in the dry ingredients mixture and pour the contents from the second bowl into it. Mix the it all together until the mixture is consistent.
  5. Add in carrots, apples and walnuts while stirring.
  6. Prepare a muffin baking tray by spraying it with olive oil.
  7. Distribute the mixture over 12 tray holes.
Baking:
  1. Place the tray in the oven and allow it to bake for 20 minutes.
  2. Check that the muffins are cooked by inserting a toothpick.
  3. Leave for 5 minutes to cool and then destroy them yum yum!
