Cashews are kidney shaped seeds and comes from cashew tree native to coastal Brazil. The nut actually grows at the bottom of the cashew apple fruit. Ingredients:
1 tbsp coconut oil, or grape seed oil or your choice of cooking oil
2 Tbsp honey
2 cups cashew nuts
1.5 cups dry unsweetened shredded coconut (sweetened will burn more quickly)
1 tbsp red pepper flakes or 2 finely chopped dry red chillies
sea salt and black pepper to taste
You can substitute other nuts such as almonds or peanuts instead of the cashews. But cashews taste amazing in this recipe.
You can adjust the honey, coconut, and red chilli flakes according to your taste.
Preparation:
1. Heat the oil in a wok and stir in the honey. After a few seconds add in the nuts. Lower the heat. The cashews can burn very quickly so stir often so they can brown evenly. Let them brown for a few minutes.
2. Add in the shredded coconut, chillies, salt and pepper. Keep stirring often and adjust heat accordingly. The coconut will brown very quickly so turn off the heat after about 3 minutes or as soon as the coconut is a browned.
