Spanish Garlic Soup Recipe

The title may not be attractive to all those out there who does not enjoy garlic. I have to say it is a very easy recipe and very delicious soup; very few ingredients are needed and you probably already have them all in your kitchen cabinet. So just look for them and take them out to enjoy from a very Spanish recipe that will make your mouth water.
You will need:
Olive oil (2 tablespoons)
Garlic (1 head, peeled and lightly crushed)
Chicken stock (6 cups)
Carrots (2, cut into matchsticks)
Red bell pepper (1, tiny sliced)
Salt (to taste)
Pepper (to taste)
How to do it:
The steps to do this are very simple, first you will need a large saucepan and you have to put it over medium heat. In this saucepan you will have to pour the oil and let it heat, before it's too hot add the garlic and cook it all for about five minutes or until the garlic turns a little browned. After this take the chicken stock and add it to the garlic and oil mix, leave it there for about 10 minutes or until the garlic has turned soft. Take this mix out from the fire and mash the garlic with a fork until it turns into coarse pasta. Now pour the remaining chicken stock and increase everything to a medium heat temperature, it has to come to boiling point, but before this add the carrots and the red pepper, continue stirring until the vegetables are tender. Now season this with salt and more pepper at your taste and enjoy from a delicious soup.
