One of the famous banana bread recipe is this one as the main ingredients is a nutritious fruit. Here is a yummy coffee-banana bread muffin recipe that you can prepare at home in no time at all.
What you will need:
- Ripe and mashed bananas - 3-4
- Melted butter - 1/3 cup
- Sugar - 3/4 cup
- Egg - 1
- Vanilla essence - 1 teaspoon
- Espresso - 1 tablespoon
- Flour - 1 1/2 cups
- Chopped walnuts - 1 cup
- Baking powder - 1 teaspoon
To prepare:
- Preheat the oven to 350F.
- This recipe caters for 12 muffins; therefore, grease and flour 12 muffin molds.
- In a bowl, break in the egg and beat till fluffy.
- Add the sugar and stir using a wooden spoon.
- Add the mashed bananas and melted butter to the mix and stir using a wooden spoon until the mix is well incorporated.
- Stir in the vanilla essence and espresso and mix all the ingredients well.
- In a separate bowl, mix the flour, walnuts and baking powder.
- Sprinkle the dry ingredients over the wet ingredients and mix well to get a smooth batter.
- Pour the batter in the muffin molds (fill only 3/4 way).
- Bake in the preheated oven for 25-30 minutes till the muffins are done. You can check by inserting a toothpick; if it comes out clean then the muffins are done.
- Cool for 10 minutes before removing from the mold, then cool on a wire rack.
While cream cheese frosting is the traditional frosting that goes with banana bread, there are some interesting frosting recipes that you can try out.
Browned butter frosting
What you will need:
- Butter - 1/3 cup
- Powdered sugar - 3 cups
- Vanilla extract - 1 teaspoon
- Milk - 4 tablespoons
To prepare:
- Heat the butter in a saucepan over low heat until just browned.
- Remove from heat and cool.
- Add the powdered sugar, vanilla and milk to the butter and whisk well to get to a spreading consistency.
- Spread on the cooled muffins, decorate with sliced bananas and cool some more before serving.
- You can also put the frosting in a piping bag and pipe it in any design on the muffins.

- Icing sugar - 1 cup
- Passion fruit pulp - 1 1/2 cups
To prepare:
- Mix the icing sugar and passion fruit pulp in a bowl.
- Drizzle over the baked muffins and cool for some time before serving.
