Kalakand is a delicious melt in the mouth sweet which is easy to prepare and loved by both children and adults. The Diwali Festival is always a great time to prepare and share sweets. Here are three different recipes for making Kalakand. The maximum preparation time for making Kalakand is 40 minutes and the process doesn't require any pre-preparation.
Try any one of these recipes this Diwali 2011 and you'll be an instant hit amongst your family and friends.
Traditional:
Ingredients
10 cups full fat milk
1/4 tablespoon Alum powder. You can also use citric acid (1/2 tsp.) dissolved in water. The purpose of both is for crystallisation.
4 tablespoons of sugar
1/4 tablespoon Ghee (clarified butter) for greasing
Method
Pour milk in a thick-bottomed aluminum pan and heat on low flame.
Keep on stirring so that it does not stick to the bottom.
When the milk starts to thicken a little (i.e. reduces to 3/4th of the quantity) add the alum powder to it. You will see that it will start to thicken.
Keep stirring till milk becomes granular and then reduces to a solid mass. Keep the flame on low for even cooking.
Add sugar and mix well. You can also add sugar-free to the mix for the diet conscious.
Keep on stirring the mixture for five to ten minutes more till it thickens again.
Grease an aluminum tray with ghee.
Pour the mix into the tray and spread evenly.
Let it set in a cool, dry place for a few hours. When the mix is set cut it into square shapes and serve.
Express with Cottage Cheese:
Ingredients
1 can sweetened condensed milk
250 grams fresh paneer (cottage cheese)
A pinch of saffron
1 tablespoon cardamom powder
8 nos. Pistachio nuts
Method
Mix all the ingredients in a microwave proof glass bowl.
Microwave on high for fifteen minutes.
Every three minutes stop, stir and restart.
Pour the mix on a greased aluminum tray and let it set for a few hours in a cool area.
Once set, cut into squares to serve.
Express:
Ingredients
1 can of sweetened condensed milk
1 tablespoon yoghurt
1/2 tablespoon ghee for greasing
1 tablespoon cardamom powder for flavour
Method
In a deep glass microwave proof bowl, add all the ingredients except for ghee.
Microwave on high for 9 minutes.
After every two minutes, take out the bowl stir the ingredients and microwave again for 2 minutes.
Let it stand for three minutes.
Pour onto a greased aluminum tray and let it set for a few hours.
Cut into square and serve.
