Grilled Vegetable Sandwich Recipe

There is just nothing else in this world like pulling out the grill and making some tasty vegetable side dishes to go along with the main course. Of course, some people are perfectly fine making a meal out of vegetables. However, grilling is all about eating well and having a good time whether you are making a grilled vegetable sandwich or you are grilling swordfish. When you get to thinking about what makes a great tasting food whether meat or vegetables, one of the first things to come to mind beside what types of meats and vegetables you will grill is that of what type of marinade you will choose to use for preparing the food for the cooking.

It is your choice of marinade that creates the flavors and aromas that you and your family crave while preparing this particular grilled sandwich. While selecting the various vegetables to include in this dish, consider your favorite marinade flavor or you can even make your own homemade marinade. Grilling vegetables is so much easier when you marinate them overnight or for several hours before putting them on the grill to cook.
Recipe for Grilled Vegetable Sandwich
What You Need
  • 1 yellow squash
  • 1 eggplant
  • 1 zucchini
  • 1 head endive
  • 4 asparagus spears
  • ½ yellow bell pepper
  • ½ green bell peppers
  • ½ red bell peppers
  • ½ teaspoon fresh chopped basil
  • 8 slices herb bread
  • 8 slices cheese
  • Marinade
How to Make It
Clean and slice the squash, eggplant, zucchini, endive, asparagus, and yellow, green, and red bell peppers. Rinse and then allow the vegetables to air dry.
Using a marinade of your choice, you will add the marinade and the vegetables to a large Ziploc food bag. Secure the bag and then place in the refrigerator overnight or for at least 4 to 5 hours before preparation time. Turn or stir the vegetables from time to time to completely cover them and allow them to absorb the marinade you have chosen to use.
After marinating the vegetables for grilling, you will need to prepare your grill. Once your grill is ready arrange the vegetables on the grill and allow them to cook until the vegetables are light brown in color. Take care not to scorch the vegetables. You may also want to remove any blistered skin that may appear on the bell peppers.
After grilling, remove the vegetables and then cut the vegetables to fit the slices of bread. Distribute the different types of vegetables to cover 4 bread slices. You can grill them too if you like, pop them into the toaster to achieve some crispy crunchiness or you can serve the bread slices at room temperature.
Add the cheese slices to the sandwiches you are building. You may want to add some mayonnaise or even serve these grilled vegetable sandwiches open faced and have the mayonnaise on the side.
