Exciting Vegetarian Recipes For Mexican Food Fans

Not eating meat does not mean you have to miss out on tasty Mexican food. In fact, some of the most delicious authentic Mexican food recipes are vegetarian, so let the following recipes inspire you. Vegetable Bake
This recipe serves eight people and contains lots of delicious typical Mexican ingredients like onion, tomatoes, chilies, corn, black beans and more. The brown rice makes it extra nutritious and wholesome.
What You Need:
  • 8 oz corn kernels
  • 1 1/2 cups water
  • 4 oz shredded cheddar
  • 8 oz sour cream
  • 1 cup tomato salsa
  • 10 oz diced tomatoes with green chilies
  • 15 oz can black beans, rinsed and drained
  • 3/4 cup uncooked brown rice
  • 4 oz shredded Mexican blend cheese
  • 2 oz sliced olives
  • 1/2 cup chopped red onion
  • 1/4 teaspoon black pepper
How To Make It:
Bring the water and rice to a boil in a big pot. Turn down the heat, cover and simmer for thirty five or forty minutes, or until it is done. Combine the corn, beans, salsa, tomatoes, cheddar, rice, pepper, and sour cream in a bowl, and then transfer the mixture into a greased two and a half quart baking dish. Sprinkle the olives and onion on top.
Bake uncovered for half an hour at 350 degrees F, then sprinkle the Mexican cheese over the top and bake for another five minutes or until the cheese has melted. Let the vegetable bake sit for ten minutes, then serve.
Creamy Chilacas
Chilacas are dark green chilies with a mild flavor. In the following recipe they are sliced and sauteed and then combined with cheese and cream. This recipe makes a nice side dish for chicken or fish or you can eat it as a snack with corn or flour tortillas.
You will need either seven poblano chilies or eight chilaca chilies. Char them and then peel them, removing the seeds, stems, and veins. Add two tablespoons each of finely chopped white onion and lime juice, three tablespoons of crumbled queso fresco (you could use cream cheese instead) and quarter of a cup of sour cream. Let the dish stand for half an hour, so the flavors can blend, then stir and serve at room temperature.
Nopales Tacos
Nopales, refried beans and potatoes are the primary ingredients in this vegetarian tacos recipe. Nopales are a kind of cactus and if you cannot get fresh ones, you can use one jar of nopales instead of two fresh ones. Just drain the jar before you use them.
You can double up the tortillas to make the tacos hold together better if you want. The following recipe makes enough for four people (that is two tacos per person).
What You Need:
  • 2 nopales with the spines removed
  • 1 cup refried beans
  • 1 teaspoon each ancho chili powder, garlic powder and cumin
  • 2 de-seeded, chopped tomatoes
  • 1 cubed cooked potato
  • 1 chopped onion
  • 1 teaspoon vegetable oil
  • 1 cup grated cheddar
  • 1 de-seeded, chopped red bell pepper
  • Sliced, pickled jalapenos
  • Salt and black pepper, to taste
  • 8 corn tortillas
How To Make Them:
If you are using fresh nopales, cut the leaves into strips and boil them in salted water for ten minutes. Heat the oil in a pan and cook the nopales, potato, onion, and bell pepper for about eight minutes, to let the flavors blend. Add the tomato, chilies, spices, salt and pepper and let the mixture cook very slowly over a low heat.
Warm the refried beans up in the microwave or in a pan. Heat the tortillas and then keep them warm in a bamboo steamer or kitchen towel. Add two tablespoons of refried beans to each tortilla, and then add two tablespoons of the vegetable mixture and some shredded cheese. Roll them up and serve hot.
