Easy Recipe: Spaghetti Carbonara in 15 Mins - Egg Free

I had training last night and didn't get back to the house till after 10, and still in need of a good feed. Another quick and easy recipe was on the cards; spaghetti carbonara.
I remember my very first attempt at this dish some years ago; eggs, parmesan, pecorino, pancetta etc. It was tasty, but also quite time consuming and expensive. I was later introduced to a friend's "cheat" version which used crème fraiche as a substitute to the eggs. And in the interests of saving money but maintaining flavour, I was sure there was an easier way.
I'm not sure if people have done this before, but last night was my first attempt at the recipe below: Spaghetti carbonara for one 3 rashers of streaky bacon A few good shavings of any available cheese (red Leicester was left in my fridge) 1 large mushroom 1 onion 2 tbsp crème fraiche A dash of milk Spaghetti Secret ingredient: Coleman's 4 Cheese sauce
Put your spaghetti in boiling water and chop the onion, mushroom and streaky bacon to your liking and fry. When the ingredients have softened (approx 5 mins); add the crème fraiche, milk and cheese sauce packet.
This recipe is easily altered by changing the quantities of the crème fraiche, milk and cheese sauce. But if you want to follow the recipe closely, pour about half the cheese sauce packet in. This little "cheat" is perfect for this dish as it lets you bring the flavour of four different cheeses to your recipe without the cost of buying them individually.
Mix this all together and take off the heat until the pasta is ready. Drain the pasta, put your pan back on the heat for another minute and combine everything together. Season to taste, adding a few shavings of your available cheese. Finish it off with a good slice of bread and butter made from my previous post, ( I use this bread for everything, as you'll see tomorrow).
I've fiddled around with this easy recipe so that you can produce great tasting food, but without the huge cost of eggs, pecorino and parmesan cheese and pancetta.
Streaky bacon £1.64(£6.56/kg) Mushroom £0.42(£4.69/kg) Onion £0.17(£0.82/kg) Creme fraiche £0.70(£0.35/100ml) Milk £0.45(£0.79/l) Spaghetti £0.74(£1.48/kg) Coleman's 4 Cheese Sauce £0.50(£1.43/100g)
Total cost £4.62 (this may sound expensive but you still have a load of milk, crème fraiche, bacon and spaghetti left)
Cost per serving £2.07 (approx.)
