Black Bean Relish Recipe - Knock Your Socks Off!

Here's a recipe I am sure you are going to enjoy. This is the recipe for a very flavorful black bean relish, perfect as a cool dip for warm tortilla chips, or to top off a nice Mexican style soup or salad. I like to make a nice fajita steak salad and just mix this relish right in. A good variation is to add some whole kernel corn to the mix. Yum!
You are welcome to try your own variations of this black bean relish recipe. Add or take away whatever you would like to suit your tastes. It is absolutely excellent as-is, but a little imagination goes a long way. I could see adding some bay shrimp and turning this into a ceviche of sorts, maybe with a bit of fresh cilantro and lime.

Black Bean Relish - The Ingredients:
* 15 oz. canned black beans, rinsed and drained
* 1 medium tomato, finely diced (to make 3/4 cup)
* 1 serrano chile, seeded and finely diced
* 1/2 cup chopped red bell pepper
* 1/4 cup finely chopped red onion
* 2 tbsp white wine vinegar
* 1 tbsp vegetable oil
* 1/4 tsp salt
Black Bean Relish - The Process:
1. In a medium bowl, combine all ingredients.
2. Cover and refrigerate at least 1 to 2 hours.
3. Enjoy with chips or as a garnish for your favorite Mexican dishes.
(Yields approx 2.5 cups of relish.)
